Vegan Open Faced Avocado Sandwich!
Finding vegetarian sandwich options can be challenging, finding vegan ones can be even harder but this is a sandwich everyone will enjoy! It’s quickly become my favorite sandwich! I have it just about every day for lunch because it’s easy, delicious and filled with healthy fats from the avocado, hearty complex carbs from the whole grain for long lasting energy and, let’s be honest, hummus makes just about every sandwich better! Pair this with a soy latte and you have a perfect mid-day pick me up! :)
